Back in the early days of Below The Salt - when we still had the luxury of dreams and wild ideas - I stumbled upon an organic chocolate maker setting up shop in Toronto. His chocolate wasn't just good; it was the kind of stuff that makes you stop mid sentence and grin foolishly.
Of course anyone who knows booze chemistry understands the problem - chocolate is basically delicious stubborn fat. And fat and alcohol mix about as well as cats and bathtubs. That's why most chocolate drinks are drowned in sugar or cream or both - just to behave.
But we figured, why not try a little Solera sorcery and keep sugar out enirely?
